Pumpkin again!

This is why I don't menu plan...
There was still some pumpkin left from making pumpkin bagels a while back. I was going to make pumpkin pancakes (some favorites around here, which I will post the recipe for ASAP), but they are quite a bit of work and the kids tend to overeat them and didn't need the carbs this morning. After spending way too much time the past few days making cut-out cookies, I wasn't up for the work, nor did we need to eat them right now. So the idea of pumpkin oatmeal came to mind and after checking out the first few recipes that popped up on a Google search, I kind of adapted/added to/edited to come up with this:

PUMPKIN OATMEAL

4 c water

2 c old-fashioned oatmeal

1/4 tsp salt

1 c pumpkin

1 tsp pumpkin pie spice

1/2 tsp cinnamon

2 Tbs maple syrup

2 Tbs brown sugar

Raisins and chopped pecans

Boil the oats in the water with the salt, pumpkin, and spices. You might want to add a bit more spices to suit your taste. Add the maple syrup and sugar at the end, again, adding to taste. Sprinkle with raisins and/or pecans if desired. Yum! This should give you a good fiber boost as well as a serving of vegetables to start your day! Made enough for 4-5 adults.
