Quick, easy, healthy, inexpensive, tasty...what more could you ask for?

This Crock Pot dates me a little I suppose (it was a wedding gift), but we have been pretty chummy (the Crock Pot and me) this fall. Last fall my sister-in-law sent me this recipe, and I have since received it from others, so perhaps it has already made the rounds. But all of us like this, even the kids, and it is SO simple to throw together, that the recipe must be posted...

TORTILLA SOUP
1 jar salsa (picante sauce)
1 jar water(use salsa jar)
1 can corn, drained
2 cans black beans, drained
2 - 3 chicken breasts
Throw it all in the crockpot and cook on high 3-4 hours (or low 6-8) until the chicken is done and easily shredded. Serve with sour cream, shredded cheese and crushed tortilla chips.

  2. I love mine! I got a new one that's bigger last December. Until then, I used one that was my grandmother's. I had no problems with it except that the crock wasn't removable. It was a pain to clean! But I'm feeling chilly which makes me think of all kinds of crockpot recipes. WARM ones! LOL!
