Happy St. Patrick's Day a wee bit late


We had the usual St. Patrick's Day fare for dinner - corned beef and cabbage, potatoes, with this sauce that a friend found in the newspaper 11 years ago! It was listed several places on the internet now. I also attempted to make the pistachio cake recipe, but cakes are finicky at 7000 feet, and though I have tried it several times in the 10 years we have lived here, it always comes out with a pothole in the middle. It still tasted wonderful and the topping disguises the pothole for the most part, unless it is terribly huge. This one didn't turn out too bad - here it is unadorned. Sorry, it disappeared too fast for a finished product shot!
Our former team members Rita and Shawnda came for dinner last night. It is like spending time with family to be with our friends from CCC staff. The kids love being with them too. Rita moved back here last summer (woohoo!) so we get to see her now and then, but we haven't seen Shawnda for about 3 years, and that was for a quick lunch at a restaurant after church. L was a baby at the time. When we were talking about them coming over, she asked if she knew Shawnda. We told her about the brief meeting and she asked, "Did she hold me?" "Did I like her?" Did she like me?" And other funny comments and questions. She warmed up to her pretty quickly and will remember this visit next time she sees Shawnda.
