They don't always turn out

Recently, I've had a few flops in the baking area. One was an Italian Easter Cake that had high altitude issues, and went down hill from there. (Literally, all three layers had deep potholes). So it became a "trifle" instead. The lemon filling was good. I would use it again, but make a box cake and flavor it with lemon instead of making the cake recipe that was a part of this.

Then I tried a peanut butter pie recipe from one of my favorite cookbooks last week. Even though it was in the oven longer than called for, the middle didn't set up right on it. My condensed milk wasn't shaken up well enough and perhaps that contributed to the problem. I'm not sure if it was my fault or the recipe's on this particular flop. But the recipe called for hot fudge sauce to top the pie with, and since we didn't have any on hand, I made some using this Gourmet magazine recipe from way back when - so much so that I couldn't find it online. It was NOT a flop, and I keep catching Geoff with a spoon in it out in the kitchen.


From Gourmet, December 1988, Makes about 1 ½ cups

3 oz unsweetened chocolate, chopped

3 Tbs. unsalted butter

2 Tbs light corn syrup

½ c unsweetened cocoa powder

1/3 c granulated sugar

1/3 c firmly packed dark brown sugar

½ c heavy cream

1 tsp vanilla

In a small heavy saucepan melt the chocolate and the butter over moderately low heat, stirring, until the mixture is smooth, add the corn syrup, and combine the mixture well. Stir in the cocoa powder, the sugars. Stir in the cream and combine the mixture well. Bring the mixture to a boil over moderately low heat, stirring until the sugar is dissolved, remove the pan from the heat and stir in the vanilla and a pinch of salt. Serve the sauce warm.

  2. I can sympathize with kitchen flops....I have more than my share of them. I just plain don't like to cook! Baking is another subject though. I love to bake. The peanut butter pie sounds intriguing....I eat peanut butter almost every day!! I never grew up!!
